The research project titled “Community Mushroom Cultivation Village for split-gill Mushrooms,” led by researcher Mr. Nantapong Pongpiriyadecha, received funding from the Office of the Permanent Secretary of the Ministry of Science and Technology for the fiscal year 2023. The project focuses on the development of split-gill mushroom cultivation and related health products, including split-gill mushroom sausage. Additionally, knowledge transfer initiatives have been implemented to educate local farmers in the Thakham community about mushroom cultivation techniques and the production of these health-oriented products. Furthermore, the findings from this research can serve as a guideline for applying these methods to create health-oriented food options for the staff at the RUTS. This application emphasizes the potential of split-gill mushrooms and their products to enhance nutritional offerings within the institution, promoting healthier dietary choices among faculty and employees.
