Rajamangala University of Technology Srivijaya has made significant contributions to the local community by imparting expertise in the processing and packaging design of sweet fish products, with the overarching aim of extending their shelf life. This initiative has been instrumental in empowering the community to forge viable careers and generate additional income for both individual families and the broader community. The instructional sessions have been conducted in collaboration with the Farmer Housewives Group at Tung Ruang Thong Community Enterprise, situated in Ban Thung Ruang Thong, Thakham, Palian District, Trang Province. Notably, the group, under the leadership of Mrs. Duangjai Petchrapeng, comprises 30 dedicated members whose core focus lies in the field of fishing products. The primary raw materials employed by this group are sourced from the local fisheries within Palian District and Trang Province. These raw materials undergo a transformation process, resulting in a range of distinct products.

In the course of interactions with the group’s entrepreneurs, it has come to light that they aspire to enhance the shelf life of their sweet fish products. Regrettably, certain challenges have been encountered in this endeavor, including issues related to the appearance, desired characteristics, quality, and longevity of the products. Furthermore, the absence of proper packaging and the omission of essential food labeling, as mandated by the Ministry of Public Health, have been identified as pressing concerns.

Recognizing the significance of addressing these challenges, the Faculty of Fishery Science and Technology at Rajamangala University of Technology Srivijaya has embarked on an effort to provide the requisite knowledge and innovation derived from research endeavors. This initiative is aimed at enhancing the quality attributes of sweet fish products and subsequently, advancing the entrepreneurs’ capabilities in this sphere. By doing so, it is anticipated that the group’s income will experience a noteworthy upsurge of 33.33%, while production efficiency is poised to improve by a remarkable margin of 50-75%.
